Jean-Claude told him in French, \u201cYou know, Daniel, that Olivier de Serres was the first to define terroir in 1600 in his work Le Th\u00e9\u00e2tre d\u2019Agriculture when he said that, \u2018Terroir est compos\u00e8 de l\u2019air, la terre et le complant.\u2019\u201d (Translation: \u201cTerroir is made up of the climate, the soil and the complant.\u201d)&nbsp;<\/p>\n\n\n\n<p>Daniel asked what complant meant, and Jean-Claude said it was an obsolete word from the Old French meaning a cultivated vine or tree that produced fruit.&nbsp;By specifying a&nbsp;cultivated&nbsp;plant, de Serres had in fact called out four, not three, elements:&nbsp;the climate, the soil, the plant and the human.&nbsp;Without the involvement of the human, there is no terroir.&nbsp;<\/p>\n\n\n\n<p>Daniel recounted this story to Sam and they decided to use it for the name of their new wine.&nbsp;The problem was that Olivier de Serres didn\u2019t actually say that.&nbsp;The exact quote (on page 147 of Le Th\u00e9\u00e2tre d\u2019Agriculture) is, \u201cL\u2019aer (old spelling), la Terre et le Complant sont le fondement du Vignoble.\u201d&nbsp;Translation: \u201cThe climate, the soil and the cultivated plant are the foundation of the vineyard.\u201d There\u2019s no mention of terroir at all, which seemed to already be in usage.
